Summer and Cucumbers

There are many kinds of vegetables that become available in summer, cucumbers, eggplants, tomatoes and so on. Growing vegetables in our home gardens is a very convenient way to get fresh vegetables at any time. The taste of vegetables grown in the summer sunshine is delicious, and they are fresh and nutritious. However, harvest time comes all at once, so we are often overwhelmed with too many vegetables at peak times. Cucumbers can become as big as loofahs in only one day.

Big cucumbers are no longer suitable for fresh salad since they have become too mature. Those cucumbers are boiled with ginger in soy sauce, vinegar and sugar to preserve them for a long time. I learned how to do this from local friends and have since made them so many times.

Toward the end of summer, when I get tired of making them, cucumbers growth begins to gradually slow down and autumn has finally come. Then it’s time to start the autumn vegetable harvest!
